5 Summer Barbecue Recipes for the Win

Summer is almost here—and that means it’s almost time to channel your inner pitmaster. Whether you just bought a beautiful new home and want to gather family and friends, or just feel like throwing the biggest, baddest barbecue this side of Texas, these delicious recipes are going to WOW everyone.

1. BOBBY FLAY’S SIGNATURE “CRUNCHBURGER”

INGREDIENTS 

The Crunchburger: 

  • 1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
  • Kosher salt and freshly ground black pepper
  • 1 1/2 tablespoons canola oil
  • 8 slices Monterey Jack cheese, each 1/4 inch thick
  • 4 potato hamburger buns, split; toasted, if desired 
  • 4 slices beefsteak tomato (optional)
  • 4 leaves romaine lettuce (optional)
  • 4 slices red onion (optional)
  • Horseradish Mustard Mayonnaise
  • 4 handfuls of your favorite potato chips

Horseradish mustard mayonnaise: 

  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp drained prepared horseradish
  • Kosher salt and freshly ground black pepper

2. CHINESE BBQ PORK (CHAR SIU)

INGREDIENTS

  • 2 lb pork shoulder roast
  • 2 tbsp soy sauce 
  • 2 tbsp hoisin sauce
  • 2 cubes red bean curd + 1 tbsp liquid
  • 1 tbsp five spice powder
  • 2 tbsp honey
  • 2 tbsp Chinese cooking wine, optional
  • ½ tsp ground white pepper
  • 1 tsp sesame oil, optionaL
  • 2 cloves garlic, finely grated or mashed

Glaze: 

  • 1 tbsp honey
  • 2-3 tsp red bean curd liquid or cooked leftover marinade

3. CARNE ASADA TACOS

INGREDIENTS

Meat 

  • 2 lbs skirt steak or flank steak 

Marinade

  • 1/3  cup of olive oil       
  • 1/4  cup of soy sauce                       
  • 2  tbsp balsamic vinegar          
  • 1 orange                           
  • 2 limes                               
  • 1 1/2 tsp chipotle powder or smoked paprika          
  • 1 tsp cumin                             
  • 1 tsp dried Mexican oregano 
  • 1 tsp onion powder 
  • 4 garlic cloves, grated 
  • ½ cup chopped cilantro

4. INA GARTEN’S TARRAGON POTATO SALAD

INGREDIENTS

  • 2 pounds medium Yukon Gold potatoes (6 to 8 potatoes)
  • Kosher salt
  • 1 cup good mayonnaise
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons tarragon or white wine vinegar
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons chopped scallions, white and green parts
  • 3 tablespoons minced red onion
  • 2 tablespoons minced fresh tarragon leaves
  • 2 tablespoons minced fresh dill

5. CAMEROONIAN “BURNING FISH”

INGREDIENTS

  • 2 large mackerel fish
  • 10-12 Njangsa grains
  • 2 green onions
  • 3 bunches of parsley
  • ½ onion
  • 4 calabash nutmeg 
  • ½ red bell pepper ½ tsp black pepper
  • ½ tsp white pepper
  • 2 bouillon cubes
  • 2 tsp salt
  • cooking oil
